- 8 chicken thighs
- 6-8 large potatoes, quartered or halved
- 5-6 carrots in 1- to 2-inch pieces
- 1 onion, cut in quarters
- 15 whole garlic cloves
- 1 tbsp kosher salt
- 1 tsp ground black pepper
- 4 tsp garlic powder
- ½ tsp paprika
- 3-4 tsp olive oil
Pre-heat the oven to 375 degrees. Get a baking sheet and line it with foil. Place the chicken, potatoes, carrots, onion, and garlic on the lined baking sheet in a single layer. Sprinkle the salt, pepper, and remaining spices evenly across the main ingredients. Bake for 90 minutes, checking half-way through. Remove from oven once chicken has reached 165 degrees, and enjoy.
