Florida Strawberry Shortcut Shortcake Recipe

RECIPE COURTESY OF FLORIDA STRAWBERRY GROWERS ASSOCIATION


INGREDIENTS:

  • 1 box yellow cake mix
  • 1 cup all-purpose flour 
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 1/3 cup milk at room temperature
  • 2 tbsp vegetable oil
  • 1 cup sour cream at room temperature
  • 2 tsp vanilla
  • Two pounds of fresh Florida strawberries
  • Whipping cream

DIRECTIONS:

  • Preheat the oven as directed on the package for a 13" x 9" sheet pan.
  • Grease the pan and line the bottom with parchment paper.
  • Combine all the dry ingredients and whisk together.
  • Add wet ingredients to dry and mix until combined. You can mix by hand or with an electric mixer on low for 2 minutes.
  • Cool in pan on a wire rack for 10 minutes, then turn the pan out onto a wire rack to cool completely.   
  • Once cooled, place in the freezer for 10 minutes; this will make cutting the shapes easier. Or wrap it in plastic and refrigerate till next day.

TO PLATE:

  • Use a biscuit cutter to cut rounds of cake. Serve two rounds per person. 
  • Plate one cake round, add sliced berries and whipping cream on top, then place another round of cake on top of it and repeat. 
  • You have a beautiful dessert that is sure to impress.
