Optimus Prime Rib Sandwich Recipe

A CULINARY JOURNEY WORTH THE SIX-HOUR ROAST

The Optimus Prime rib sandwich is so good that it was actually named after a transformer character. If you are looking for a sandwich that is in-your-face-decadent, and you have time on your hands, this is the perfect recipe.

Your dedication to spending six hours roasting the ribeye will not go unnoticed. This will make about 11 to 12 portions and is enough to feed a crowd, but after taking a bite of the masterpiece, your tastebuds will surely thank you for taking on the challenging endeavor.

PRIME RIB INGREDIENTS:

  • 5 lb prime rib
  • 2 tablespoons garlic (finely minced)
  • 1 tablespoon salt
  • 3 tablespoons sugar

PRIME RIB PREPARATION:
The rib roast must be taken out of the fridge and tempered at least for 1 hour before  putting it in the oven.

  • Combine garlic, salt & sugar to create salt rub.
  • Rub the salt rub onto the meat and leave it in the fridge overnight.
  • Temper the rib roast at room temperature for at least one hour, and wrap it very tightly with several layers of plastic wrap.
  • Roast the ribeye at 140 F for about 6 hours. The inner temperature should reach 118F.
  • Turn up oven temperature to 300F. Place the ribeye and create a nice golden brown crust. This should take about 5 min.
  • Pull out the Rib roast and cool down to room temperature and let it rest at least for 1 hour.
  • Slice the rib roast

HORSERADISH CREAM INGREDIENTS:

  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1 tablespoon lemon juice
  • Lemon zest
  • ½ cup prepared horseradish (squeeze out liquid with a sport towel)
  • 1 teaspoon sugar
  • 1 tablespoon fresh horseradish (finely microplaned)

HORSERADISH CREAM PREPARATION:

  • Combine first 6 ingredients in a mixing bowl and fold them with a rubber spatula.
  • When it’s mixed well, add B (microplaned fresh horseradish) and reserve until  needed.
  • Taste may need to be adjusted depending on the strength of the horseradish.

GARLIC BUTTER INGREDIENTS:

  • 2 teaspoons chopped garlic
  • 3 tablespoons butter
  • 3 tablespoons olive oil
  • ¼ teaspoon salt

GARLIC BUTTER PREPARATION:

  • Mix all ingredients together fully

SANDWICH INGREDIENTS:

  • Fully cooked prime rib slices
  • 1 baguette per sandwich
  • Home-made horseradish cream
  • Garlic butter
  • Slices of swiss cheese

SANDWICH PREPARATION:

  • Cut the baguette in half without detaching, drizzle a good amount of garlic butter and place it onto the grill or a pan for about a minute. At the same time, place a portion of the prime rib to a small sheet tray lined with parchment paper and about a teaspoon of the garlic butter.
  • Place it in the oven for a few minutes to bring it to room temp. (The oven should not be super-hot)
  • Make sure the board is ready to plate before composing the sandwich. Cheese will be melted on top of the prime rib, not on top of the bread.
  • Put sliced meat so that it looks FULL, not flat, and cut the sandwich in half.
