Located just outside of Bergen in Norway, Arild’s fifth generation family farm has been welcoming Trafalgar guests for many years. Here, guests have the opportunity to meet the Øvre-Eide family, swap stories, meet the animals of the farm, and of course are also treated to a delicious, home cooked traditional Norwegian meal.
Whilst we are unable to visit Arild and his family for the next little while, we can still recreate a little taste of his culture in our own homes. To do this, Arild has kindly shared the recipe for a dish that has been in his own family for generations – his Norwegian apple tarts.
WHY IS THIS RECIPE SPECIAL TO YOU?
It is a very tasty cake, but what makes it extra special is that we use apples form the Hardanger fjord and the Sognefjord which the Trafalgar guests visits on their journey in Norway. The apple trees bloom in May/June, and the sight is beautiful.
- Puff pastry
- Custard cream
- Icing sugar
- Make puff pastry from scratch or buy ready-made in the shop
- Roll the pastry to 3mm
- Cover the cake pans (each pan is 7cm) with the pastry
- Make small holes in the bottom of the pastries with a fork, to stop them from rising too much when baking
- Place one tbsp of custard cream in each pan
- Add some raisins and hazelnut flakes
- Peel the apples, cut them into slices and place them in the pans
- Sprinkle a little sugar and cinnamon on the apples
- Place the pans in the middle of an oven preheated to 240°C. 10. Reduce the heat to 225 °C
- Bake in the oven for 8 minutes
- Let the cakes cool on an oven rack
- Serve with a light sprinkle of icing sugar
